Outdoor Kitchen Eats - Bacon-Wrapped Venison


There's no denying that we love to eat and this is one of our greatest indulgences - Bacon Wrapped Backstrap! And that's not it, it's butterflied and filled with creamy pepperjack cheese and candied jalapenos. Seriously, melt in your mouth - greater than your favorite filet.

Here's the recipe:

1). PREP - Slice the backstrap into round medallions and butterfly along one end. Season with salt, pepper, tony's, and a dash of soy sauce. You'll need Bacon (Wright's is the BEST), Candied Jalepeno Relish, Pepperjack Cheese, Toothpicks. Stuff each medallion with a square of cheese and a spoonful of relish. Wrap bacon around and seal with a toothpick.

2) GRILL - Place a flat side on the grill and begin cooking. The marbling of the bacon will add some much juiciness to the lean backstrap. Once each side has browned and cooked for min 3-4 minutes, add a drizzle of honey and cook another minute.

3) DEVOUR - Allow to sit for a few minutes prior to eating. Get ready for a taste explosion. We love eating this dish with Smothered Fried Potatoes and Creole Corn.
